This delicious fruit cake also known as English Plum cake and Indian Christmas cake is effortless to make with easy to get ingredients.

Ingredients |
Sugar – one and a half cup |
Sea salt – 1 Tablespoon |
All-purpose flour – one and a half cups |
Orange zest and dates soaked in rum – 1/4 cup |
Raisins soaked in rum – 1/4 cup |
Crushed cashews – 1/4 cup |
Maraschino cherries, tutti-frutti – 1/4 cup |
Cloves – 4 |
Cinnamon powder – 1/2 teaspoons |
Baking powder – 1 teaspoon |
Vanilla essence – 1 teaspoon |
Butter – 1/2 cup |
Coconut milk – 3 tablespoons |
Eggs – 3 Large |
Milk – 2 Tablespoons |
Instructions: |
1. Soak orange zest and raisins in rum overnight. |
2. Heat one cup of sugar into a pan over low heat until it caramelizes(view here). |
3. Add half cup of water. The caramelized sugar immediately becomes sticky and starts to harden. Roll it into a mass with a spatula and set aside to cool. |
4. Add half cup all-purpose flour, soaked orange zest and dates, soaked raisins, crushed cashews, maraschino cherries and tutti-frutti to a bowl. Mix them well together. |
4. Sift together one cup flour, crushed cloves, cinnamon powder, baking powder, butter, eggs, half cup of sugar and vanilla essence into a bowl. |
5. Beat them all together until it forms a smooth batter. |
6. Add the prepared dried fruit mix, milk and caramel to the batter. |
7. Mix them well together on low speed. |
8. Pour the finished batter into a greased cake tin. |
9. Bake for 40 minutes at 180°C/350°F |
