Ingredients |
Prawns – 500g |
Salt – 1 teaspoon |
Red chilli powder – 2 teaspoons |
Tamarind – 20g |
Turmeric powder – 1 teaspoon |
Tomatoes – 3 |
Coconut oil – 2 Tablespoons |
Onion – 1 |
Garlic -1 |
Ginger – 1 small piece |
Coconut milk – 1 cup |
Instructions: |
1. Add chilli powder, turmeric powder and salt to prawns and mix well. Make sure that the prawns are all well coated in the spices and keep aside for 15 minutes. |
2. Put the tamarind in about 50ml water and keep aside to soak. After 10 minutes, squeeze the juice out of the tamarind and discard the filtered out stuff. |
3. Chop Onion, Tomatoes, Garlic and ginger. Squeeze them together to extract the flavor. |
4. In a pan, add marinated prawns and the vegetable mix prepared earlier and pour the tamarind juice on top. |
5. Let it cook for 10 minutes. |
6. Add coconut oil and coconut milk. |
7. Mix well and let it cook for 5 more minutes on low heat. |
8. Serve hot and enjoy!!! |
